Kosher salt consists of larger grains with a more irregular shape than table salt. It is all natural and does not contain any additives such as iodine. It is great for canning as well as removing liquid from meat. It is a sufficient substitute for table salt in cooking, but is generally not recommended for baking with small amounts of liquid, as it does not dissolve properly -- possibly leaving small bits of salt in the finished product.
