Saigon Cinnamon is from the bark of an evergreen tree indigenous to mainland Southeast Asia, and is produced primarily in Vietnam. It has an intensely warm and spicy flavor which is more pronounced than that of the traditional cinnamon made from the Casia plant. It is also an important ingredient in the broth used to make pho, a popular noodle soup dish.
